Kids at home for summer vacation equals A LOT of low carb cooking and baking! My family has tried some great recipes over the last several weeks and we want to share our successes with you!

Chocolate Chip cookies:
1.) These cookies are egg-free and dairy-free, held together by some sort of voodoo magic. Press down into a normal cookie shape. Ours did not spread at all. https://chocolatecoveredkatie.com/…/10/08/keto-cookies-rec…/
2.) These are my kids’ favorite chocolate chip cookies! They’re gooey and pillowy soft, just like the photo suggests here —> https://www.heyketomama.com/keto-peanut-butter-chocolate-chip-cookies/
*If you don’t have access to low carb chocolate, finely chop a bar of Lindt (or equivalent) 85% chocolate. This adds a few more carbs, so go easy!
** I also love chocolate chips and baking pieces from Luv Ice Cream whenever I'm back in my home state of Minnesota, USA (available to order).
Lemon Cupcakes
The cupcakes solo (without frosting) are dairy-free, but the frosting is really extraordinary. https://www.ditchthecarbs.com/low-carb-lemon-cupcakes
Low carb Poffertjes
in honor of my Dutch heritage, these give me all the feels (YouTube video):

Tagalong Cookie Bars:
Another chocolate and peanut butter combo! Our favorite!! These are delish and come together quickly, with minimal bowls dirty. https://joyfilledeats.com/tagalong-cookie-bars/
Pancakes:
Our tried-and-true-long-time-favorite pancake recipe. Super quick and easy in a blender ( it also works with an immersion blender!) You’d never believe these are low carb.

Pizza Crusts:
We love this pizza crust. It’s a fathead variation but doesn’t have quite the blood sugar impact as a full cheese recipe would. (You still may need a dual-bolus or a longer-acting bolus such as Regular insulin). https://www.lowcarbmaven.com/low-carb-pepperoni-pizza/
SO if you want to indulge a little, these are some great tried-and-true recipes for you.
** If you are trying to lose weight or if you have trouble controlling your sweet intake, these may not be the right option for you.
If you make one of these recipes, please leave a comment below to let us know your thoughts!
